This super easy Zucchini Slice Recipe is sure to be a hit with the kids at lunchtime and at dinner parties alike. This is the perfect base recipe to change and modify over time and has endless possibilities. For a vegetarian option swap out the bacon for capsicum or eggplant. If you love your veggies you could always add more in such as carrot, spinach, maybe some corn. Enjoy!

How To Make Zucchini Slice

1Get all your ingredients together and ready to make some delicious zucchini slice so that you can get stuck in straight away.

2Make sure to preheat oven to 170°C as you want to make sure that the slice mix goes into a warm oven for best results. Nothing beats fresh oven baked zucchini slices!

3Grease and line a flat slice tin, We are using a 30 x 20cm lamington tray for our slice. Having your slice in a thiner tray seems to cook it more evenly and results in a nice oven baked crispy zucchini slice.

4Grab your beautiful organic eggs and beat them together in a large glass bowl until nicely combined. The more yellow the egg mix the better.

5Now grab the flour and lightly sift it into the egg mix and beat until there is a smooth consistency.

6Grab the zucchini, onion, bacon (optional), cheese and olive oil and stir to combine into the mixing the bowl. Make sure the zucchini mix has a nice consistency and everything is coated evenly.

7Now grab the greased tray and pour the zucchini mix in making sure to keep it evenly spread across the whole tray.

8Grab the tray ful of the zucchini mix and pop it into the oven for roughly 30 minutes or until you have a wonderful crispy golden brown zucchini slice staring back at you. Make sure the slice is golden on top and evenly cooked through you can test the centre by sticking a sharp knife into the center of the slice.

9Serve the zucchini slice warm or cold with a side salad. We were naughty and added some parmesan cheese to ours which formed a nice crust over the zucchini slices.

This is a super versatile base recipe that gives you a great starting point to build on. This slice can be really lovely on the go and is perfect for lunches and quick snacks on the go.

You can be meat free and substitute for you favourite vegetables or you can be a little naughty and some delicious cheese such as cheddar or swiss.

If you are a meat lover then you can add bacon, chicken or pancetta.

For the seafood lovers you can include salmon or prawns to give it a whole other dimension.

150 g Self-raising Flour

375 g Organic Grated Zucchini

1 Large Brown Onion

200 g Rindless Byron Bacon

1 cup Grated Cheddar Cheese

60 ml Olive oil

1 pinch Pick Himalayan Rock Salt

1 pinch Organic Ground Black Pepper
